Watermelon Carpaccio

Ingredients
1/4 seedless watermelon
Zest and juice of 1 lemon
1/4 cup pistachios, roughly chopped
1 bunch fresh mint, chopped
1 tsp hot honey
1 tbsp Clos Mesorah olive oil

Instructions
1.⁠ ⁠Slice the watermelon into very thin sheets or strips.
2.⁠ ⁠Arrange the slices on a serving platter.
3.⁠ ⁠Drizzle with lemon juice, lemon zest, olive oil, and hot honey.
4.⁠ ⁠Sprinkle with chopped pistachios and fresh mint.
5.⁠ ⁠Serve chilled.
