Watermelon Carpaccio
Ingredients
1/4 seedless watermelon
Zest and juice of 1 lemon
1/4 cup pistachios, roughly chopped
1 bunch fresh mint, chopped
1 tsp hot honey
1 tbsp Clos Mesorah olive oil
Instructions
1. Slice the watermelon into very thin sheets or strips.
2. Arrange the slices on a serving platter.
3. Drizzle with lemon juice, lemon zest, olive oil, and hot honey.
4. Sprinkle with chopped pistachios and fresh mint.
5. Serve chilled.
